You've probably heard or seen the word 'harissa' before but you've likely been conned. Unlike all the pseudo harissa products out there, mainly watered down and spiced sauces that lack flavor, substance, and soul, we produce a high quality true-to-origins product that any Tunisian would proudly embrace as theirs. Our harissa is not a watery sauce or thin purée, it's a thick, rich, sun-dried chili paste bursting with flavor. A paste so thick that you cannot drizzle or pour it over something like all the other watery impostors that falsely claim to be harissa.
In Tunisian vernacular, it is called harissa diari (or arbi), meaning that it is the true original thick paste that dates back to the 17th century typically found in Tunisian homes, as opposed to the industrially produced sauce referred to as harissa souri commonly seen in yellow cans or tubes. Harissa souri is what most people around the world think of as harissa when in reality it is not technically harissa but more like a harissa-style sauce created around the middle of the 20th century. Our harissa is the ancestral Nablia version, i.e. from the Tunisian city of Nabeul, the harissa capital of the world.
We don't use vinegar, lemon juice, or forbidden ingredients like bell peppers and tomatoes as an excuse to water down our product in order to increase our profit margin. We also don’t rehydrate paprika and call it harissa…that would be disrespectful to our ancestry and to you.
Is harissa usually spicy? Yes. Does it have to be VERY spicy? Not at all. In fact, we put forward a mild version in order to defy the “hotter is better“ craze and prove a point: A good harissa comes down to its flavor, not its spiciness. We also want those averse to spiciness to not feel left out and instead have the opportunity to experience a good harissa. A spicy harissa is obviously delicious but even a mild harissa can have a deep and rich flavor reflective of the quality of its ingredients.
We use high quality sun-dried guajillo chilis, fresh garlic, salt, organic extra virgin olive oil, and our maternal family’s blend of coriander and caraway. We include minimal amounts of white wine vinegar as a flavorful way to ensure food safety and shelf stability; that way we can ship them to you no matter where you are in the United States.
Slather it on your sandwiches, add it to your sauces, use it as a marinade, or simply enjoy it on its own as a condiment with bread and olive oil... the culinary possibilities are endless with such a traditional yet versatile product.
