Torchi is a pickled Tunisian salad often served as a small apéritif-style side dish (known as kemia in Tunisia). It’s lemony, spicy, and a great accompaniment to any meal! This version is quite basic so feel free to modify it by incorporating other veggies such as carrots or fennel, or by playing around with the spices!
White Turnips, peeled & thinly sliced (2)
Lemon Slices (2), quartered
Harissa Paste, 2 tbsp
Garlic Cloves, minced (2)
Vinegar, 1 tbsp
Vinegar, 1 tbsp
Ground Coriander, 1 tbsp
Kosher Salt, 1 tsp
Ground Caraway, 1 tsp
Extra Virgin Olive Oil, 1-2 tbsp
Black Olives (4)
1. In a small bowl, add the thinly sliced turnips followed by the minced garlic, harissa paste, lemon juice, vinegar, sea salt, and ground coriander, and lemon slices. Mix well until the turnip slices are well coated.
2. Cover the bowl with plastic wrap and leave the turnip slices to marinate in the refrigerator for at least 4 hours or overnight.
3. Serve on a plate, garnish with a few black olives, and drizzle extra virgin olive oil on top.
