This traditional, spreadable Tunisian zucchini ‘salad’ is perfect as an appetizer or Mezze-style side dish. We highly recommend garnishing this salad with traditional toppings such as olives, pickle peppers, and hard boiled egg slices. You can also go crazy with whatever other toppings you have in mind!!
Zucchini, Small (5-6)
Garlic cloves (6)
Harissa Paste, 2 tbsp
Extra Virgin Olive Oil, 2 tbsp
White Vinegar, 2 tbsp
Coriander (ground), 1 tbsp
Salt, 1 tsp
Egg (hard boiled & cut into 4 pieces) (1)
Olives (4)
Pickled Peppers (4)
1. After washing the zucchini and cutting off both ends, slice them into 1-2 inch thick pieces.
2. Add water to a 2 compartment steamer, turn on the heat, and add the zucchini pieces to the top compartment followed by the garlic cloves. Steam with the lid on for 20 minutes.
3. Once the zucchini is cooked through, they should be very soft to the touch. Transfer the cooked zucchini & garlic to a bowl and mash with a potato masher or even a fork. There will be some excess water released so you’ll need to transfer the mashed zucchini back into the steamer (or a strainer) so that the excess water can drain out.
4. Transfer the cooked zucchini back into the bowl and add the harissa paste, extra virgin olive oil, vinegar, coriander, and salt. Mix and mash any large pieces of zucchini that remain.
5. Spread the zucchini salad onto a plate and garnish with boiled egg slices, olives, pickled peppers, and the chopped parsley.
6. Enjoy with your favorite bread!
