H-E-B Couscous with red bell peppers topped with saucy minty harissa meatballs drizzled with a lemony tzatziki dressing, garnished with pickled onions.

Ingredients

    • H-E-B Couscous, 1 Box

    • Red Bell Pepper, 1 cup, diced

    • Extra Virgin Olive Oil, 1 tbsp

    • Kosher Salt, 1 tsp

    • Black Pepper, ½ tsp

    • 93% Lean Ground Beef, 1 lb

    • Harissa Paste, 3 tbsp

    • Extra Virgin Olive Oil, 1 tbsp

    • Minced garlic, 1 tbsp

    • Dried mint, 1 tbsp

    • Kosher salt, 1 tsp

    • Black pepper, ½ tsp

    • Smoked Paprika, 2 tsp

    • Water, 1 cup

    • Tzatziki Sauce (2 parts Tzatziki, 1 part lemon juice)

    • Pickled Onions

    • Chopped Parsley

    Directions

    1. 1. Cook the H-E-B couscous according to the package’s instructions. After fluffing the couscous, allow to cool to room temperature, about 15 min at least.

    2. 2. In a bowl, add the couscous, diced red bell peppers, extra virgin olive oil, salt, and black pepper. Mix well and set aside.

    3. 3. In a large bowl, combine the ground beef, harissa paste, extra virgin olive oil, minced garlic, dried mint, salt, and black pepper. Hand mix until all the ingredients are evenly and well incorporated into the ground beef mix.

    4. 4. In a large preheated pan or pot on medium-high heat, add the meatballs and sear them on all sides by occasionally stirring them around until nicely browned all over.

    5. 5. After about 5-10 minutes of searing, add the tomato paste, smoked paprika, and water and stir until a nice smoky tomato sauce is obtained. Cover and allow about 10-15 minutes for the meatballs to simmer on very low heat in the sauce. Set Aside.

    6. 6. For the tzatziki sauce, combine two parts tzatziki with one part lemon juice in a cup and mix until a smooth sauce is obtained. Adjust the ratio to obtain desired sauce thickness and flavor.

    7. 7. Assemble the bowl: Start with the couscous at the bottom then top it off with a few meatballs, pour over some of the sauce, drizzle the lemony tzatziki sauce over the meatballs and couscous. Garnish with pickled red onions and parsley. Enjoy!
