A straightforward take on harissa chicken in a sandwich! The extra virgin olive oil really brings out the essence of the harissa in this recipe and the acidity of the pickles cuts right through everything beautifully. Perfect for parties and get-togethers!
Chicken Thighs (Boneless & Skinless), 1.5lbs
Buns (any kind!)
Harissa Paste, 2 tbsp
Extra Virgin Olive Oil, 3 tbsp
Mayonnaise, ½ tbsp per bun
Pickles
Kosher salt, 1 tsp
Black Pepper, ½ tsp
1. On a baking sheet lined with aluminum foil or parchment paper, lay out the chicken and add 1 tbsp extra virgin olive oil, 1 tsp kosher salt, and ½ tsp black pepper. Mix well then spread them out so that there is space between the chicken thighs. Bake in a preheated oven for 30min at 425F.
2. In the meantime add 2 tbsp of the harissa paste and 2 tbsp extra virgin olive oil to a bowl and mix until well homogenized. Set aside.
3. Once the chicken thighs are done, toss them in the harissa-olive oil mix until well coated.
4. Toast the buns then spread mayo on one half, add the harissa chicken, top with pickles, and close the sandwich with the second bun half.
5. Dig in and enjoy!
